So !!!error: Indecipherable SUB-paragraph formatting!!! is in the oven right now. Here in Manhattan I'm constantly on the alert for the best meatloaf recipe, the best thin-crust pizza, the best Italian sub (so far the !!!error: Indecipherable SUB-paragraph formatting!!! - they slice the meat right in front of you), and the best tamale. What's your recommendation / food search.

We ordered in last night - the GF wanted mashed potatoes, so I got meatloaf and mashies from a place called Harriet's Kitchen. The meatloaf was OK, not great, so I said I could do better. She said, effectively, prove it. So a variation of that recipe is on the menu. Japanese bread crumbs instead of bread, more W sauce, a bit less milk. And less salt - you can always salt it. And more onions. I can't just follow a recipe, I have to fuck with it.

I am partial to bitters. Pale ale, but flavorful. The doorman will let you up.

Basting it with ketchup before baking is good, but what you REALLY want to do is go buy the fattiest bacon you can find and cover the top of the loaf with it before putting it in the oven

If only - the GF (all 97 pounds of her) HATES fat, and doesn't like bacon (except when she steals a piece). She eats sopressata, which I have explained is fattier, but she won't hear it. Perhaps if I peel the bacon off at the end ...

Her steak of choice is filet mignon. Mine is a ribeye. Go figure.
